Top Welsh chef announces his Christmas menu….and there’s no turkey to be found!

Tom Simmons, the Welsh chef championing all things Wales at his eponymous restaurant at One Tower Bridge, absolutely loathes turkey.

In his mind, the only meat worth serving on Christmas Day is Welsh Beef.

Luckily for Tom, he sources his Welsh Short Rib (soon to be served at the restaurant alongside the creamiest, butteriest mash, charred hispi cabbage, and beef jus) from a family butcher in deepest Carmarthenshire, who Facetimes Tom every week to walk him round their ageing room so he can pick the best cuts.
